Beer is one of the oldest alcoholic beverages in the history of mankind. Beer is an alcoholic drink, produced in process of malt alcoholic fermentation, hops, water and brewer's yeast. The basic ingredient is cereal malt (most often barley) as a extract source on which the favour fullness and concentration of basic beer flavor depend. Beer production technology is a demanding process, starting with the malt production and followed by the basic beer production technology. In addition to industrial production, beer is also produced in small quantities according to an individual, traditional recipe, the so-called craft beers. The mentioned type of beer provides a new combination of aroma, bitterness, alcohol and represents as a new market product of economic and market value. The main aim of research is presentation of domestic beer production with an emphasis on the uniqueness of color, aroma and taste. In addition, the advantage of craft beer production is the adaptability to the production process depending on individual consumers.
