Abstract
Alkoholna pića se mogu proizvoditi od raznog vrsta voća, tehnološkim procesima pripreme sirovine, fermentacije i destilacije, takva vrsta alkoholnih pića nazivaju se likeri. Likeri su također alkoholna pića s nešto većim postotkom alkohola od voćnih rakija zbog procesa proizvodnje. U voćni destilat se potapa odnosno macerira voće koje odaberemo kako bi dobili određenu aromu. U ovom radu detaljno su opisani svi procesi proizvodnje voćnih rakija i likera. Navedeni su problemi i poteškoće koji se javljaju u toku proizvodnje i moguća rješenja istih problema. Važno je da proizvod bude pogodan za tržište i da ispunjava sve zakonske norme pa se u radu navode i određeni pravilnici.
Abstract (english)
Fruit brandies are alcoholic beverages that can be produced from various fruit types, by technological processes of raw material preparation, fermentation and distillation. Liqueurs are also alcoholic beverages with a slightly higher percentage of alcohol than fruit brandies due to the production process. The fruit we choose is immersed or macerated in the fruit distillate to get a certain aroma. This paper describes in detail all the processes of production of fruit brandies and liqueurs. The problems and difficulties that arise during production and possible solutions to the same problems are listed. It is important that the product is suitable for the market and that it meets all legal norms, so certain regulations are listed in the paper.
